Instructions

1. Boil the Yuca

  1. If using fresh yuca, cut it into large chunks and remove the tough fibrous core. If using frozen yuca, thaw it slightly for easier cutting.
  2. Place the yuca pieces in a large pot of salted water and bring to a boil. Cook for 25-30 minutes, or until fork-tender.
  3. Drain and set aside on a serving plate.

2. Prepare the Mojo Sauce

  1. In a small saucepan, heat the olive oil over medium-low heat.

3. Assemble & Serve

  1. Pour the warm mojo sauce over the cooked yuca.
  2. Garnish with chopped fresh parsley for color and freshness.
