Instructions
1. Boil the Yuca
- If using fresh yuca, cut it into large chunks and remove the tough fibrous core. If using frozen yuca, thaw it slightly for easier cutting.
- Place the yuca pieces in a large pot of salted water and bring to a boil. Cook for 25-30 minutes, or until fork-tender.
- Drain and set aside on a serving plate.
2. Prepare the Mojo Sauce
- In a small saucepan, heat the olive oil over medium-low heat.
- Add the minced garlic and sauté until fragrant and lightly golden (about 1 minute). Be careful not to burn it!
- Stir in the salt, cumin, black pepper, and oregano.
- Remove from heat and immediately add the sour orange juice, stirring to combine.
3. Assemble & Serve
- Pour the warm mojo sauce over the cooked yuca.
- Garnish with chopped fresh parsley for color and freshness.
- Serve immediately and enjoy this classic Cuban dish!
