Instructions

1️⃣ Prepare the Crust

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl until combined.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes, then let it cool while you prepare the filling.

2️⃣ Make the Cheesecake Filling

  1. Beat cream cheese and sugar until smooth.
  2. Add vanilla extract and eggs, mixing one at a time.
  3. Stir in sour cream and melted white chocolate, blending until creamy.
  4. Pour the filling over the cooled crust.

3️⃣ Bake the Cheesecake

  1. Place the cheesecake in a water bath (wrap the pan in foil and place it in a larger pan with 1 inch of hot water).
  2. Bake for 45-50 minutes, until the center is slightly jiggly.
  3. Turn off the oven and let the cheesecake cool inside for 1 hour to prevent cracks.
  4. Chill in the fridge for at least 4 hours, preferably overnight.

4️⃣ Make the Strawberry Topping

  1. In a saucepan, combine strawberries, sugar, and lemon juice.
  2. Cook over medium heat until the strawberries soften.
