1️⃣ Prepare the Crust
- Preheat oven to 325°F (160°C).
- Mix graham cracker crumbs, melted butter, and sugar in a bowl until combined.
- Press the mixture into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then let it cool while you prepare the filling.
2️⃣ Make the Cheesecake Filling
- Beat cream cheese and sugar until smooth.
- Add vanilla extract and eggs, mixing one at a time.
- Stir in sour cream and melted white chocolate, blending until creamy.
- Pour the filling over the cooled crust.
3️⃣ Bake the Cheesecake
- Place the cheesecake in a water bath (wrap the pan in foil and place it in a larger pan with 1 inch of hot water).
- Bake for 45-50 minutes, until the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool inside for 1 hour to prevent cracks.
- Chill in the fridge for at least 4 hours, preferably overnight.
4️⃣ Make the Strawberry Topping
- In a saucepan, combine strawberries, sugar, and lemon juice.
- Cook over medium heat until the strawberries soften.
- Stir in the cornstarch mixture and cook until thickened.
- Let it cool, then spread over the chilled cheesecake.
