- Preheat the Oven: Set your oven to 350°F (175°C). Prepare a tube pan (angel food cake pan) by not greasing it, as the batter needs to cling to the sides during baking.
- Sift the Dry Ingredients: Sift together the cake flour and powdered sugar. This helps ensure a smooth, light cake texture and prevents clumps from forming.
- Whip the Egg Whites: In a clean, dry bowl, whip the egg whites with the cream of tartar and a pinch of salt using an electric mixer. Start at a low speed and gradually increase to medium-high. Once soft peaks form, slowly add the granulated sugar while continuing to whip until stiff, glossy peaks form. The egg whites should stand tall and firm.
- Fold in the Dry Ingredients: Gently fold the sifted flour and powdered sugar mixture into the egg whites in batches. Be careful not to deflate the batter—this is what gives the cake its light, airy texture!
- Bake: Pour the batter into the ungreased tube pan, and use a spatula to smooth the top. Bake for 35-40 minutes or until the cake is golden brown and springs back when touched. You can check doneness by inserting a toothpick—if it comes out clean, it’s ready!
- Cool the Cake: Once baked, invert the pan (place it upside down) to cool. This helps the cake keep its height and prevents it from shrinking. Let it cool for at least 1-2 hours.
- Remove the Cake from the Pan: Once completely cool, use a knife to loosen the edges of the cake from the pan. Gently remove the cake from the pan and place it on a serving plate.
