Instructions

1️⃣ Prepare the Seafood

  1. If using fresh clams, make sure to scrub and rinse them thoroughly.
  2. Cut your fish fillets into bite-sized chunks and set aside.
  3. Prepare your shrimp, ensuring they’re peeled and deveined.

2️⃣ Cook the Aromatics

  1. In a large pot or Dutch oven, melt the butter over medium heat.
  2. Add the onion and cook for about 5 minutes, until soft and translucent.
  3. Add the garlic and cook for another 1-2 minutes, until fragrant.

3️⃣ Add the Liquids & Potatoes

  1. Pour in the fish stock, followed by the diced potatoes.
  2. Add the dried thyme, bay leaf, paprika, and salt and pepper to taste.
  3. Bring the mixture to a simmer and cook for about 15 minutes until the potatoes are tender.

4️⃣ Add the Seafood

  1. Add the fish chunks and shrimp to the pot, cooking for about 5-7 minutes, or until the seafood is cooked through.
  2. Stir in the clams and continue to simmer for another 2-3 minutes until the clams open up (discard any that don’t open).

5️⃣ Make it Creamy

  1. Lower the heat and stir in the heavy cream and milk.
  2. Allow the chowder to simmer for an additional 5 minutes, letting all the flavors meld together.

6️⃣ Final Touches & Serve

  1. Remove the bay leaf and taste, adjusting the seasoning with more salt and pepper if necessary.
  2. Garnish with fresh parsley before serving.
  3. Serve with crusty bread or crackers on the side for dipping.

Tips for the Best Seafood Chowder

  • For extra depth of flavor, you can add a splash of white wine or sherry when cooking the onions.
  • If you prefer a thicker chowder, mash some of the potatoes in the soup before adding the seafood to help thicken the base.
  • Feel free to experiment with different types of seafood, like scallops, mussels, or lobster—this recipe is versatile!
  • Stir occasionally while cooking to prevent the cream from separating.
