- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika

How to Make Sausage and Vegetable Stew:
Step 1: Brown the Sausage
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into small crumbles with a spoon as it cooks. This should take about 5-7 minutes. Once the sausage is cooked through and nicely browned, remove it from the pot and set it aside.
Step 2: Sauté the Vegetables
In the same pot, add a little more olive oil if needed, then toss in the onion and garlic. Sauté them over medium heat for 3-4 minutes until the onion becomes soft and translucent. Add the carrots, celery, and zucchini (if using) and continue to cook for another 5 minutes to soften the vegetables.
