Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
Step 2: Prepare the Dry Ingredients
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
Step 3: Cream the Butter and Sugar
In a large mixing bowl, beat the butter and sugar until light and fluffy (about 2-3 minutes). Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
Step 4: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the butter mixture, alternating with milk. Start and end with the dry ingredients, mixing until just combined. Do not overmix.
Step 5: Add the Cherries
Gently fold in ½ of the cherries into the batter. Pour the batter into the prepared cake pan and spread evenly. Arrange the remaining cherries on top, pressing them slightly into the batter. Sprinkle with 1 tbsp sugar for a caramelized topping.
Step 6: Bake the Cake
Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. If using frozen cherries, baking time may be slightly longer.
Step 7: Cool and Serve
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving.
Tips for the Perfect Cherry Cake

✅ Toss cherries in flour before mixing them in to prevent sinking.
✅ Enhance the flavor with a splash of almond extract, which pairs beautifully with cherries.
✅ Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.
