Instructions

Step 1: Sear the Beef

  1. Pat the chuck roast dry with paper towels. Season with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  3. Sear the roast for 3–4 minutes per side until browned. Remove from the pot and set aside.

Step 2: Build Flavor & Cook

  1. In the same pot, add the sliced onion, garlic, carrots, and celery. Sauté for about 5 minutes.
  2. Stir in tomato paste and cook for 1 more minute.
  3. Pour in the beef broth, red wine, and Worcestershire sauce, scraping up any browned bits from the bottom.
  4. Return the roast to the pot, cover, and simmer on low for 3–4 hours, or until the meat is fork-tender. (Alternatively, cook in a slow cooker on low for 8 hours or in an Instant Pot on high pressure for 60 minutes, followed by a natural release.)

Step 3: Make the Mashed Potatoes

  1. While the roast is cooking, boil the potatoes in a large pot of salted water until fork-tender, about 15–20 minutes.
  2. Drain and return the potatoes to the pot. Mash them with butter and cream, seasoning with salt and pepper to taste.

Step 4: Serve & Enjoy

  1. Remove the pot roast from the pot and shred it into large chunks.
  2. If you prefer a thicker gravy, mix 1 tablespoon cornstarch with 2 tablespoons cold water, then stir into the pot and simmer until thickened.
  3. Spoon the mashed potatoes onto plates and top with the tender pot roast and its rich gravy.
