Instructions:

Step 1: Prepare the Dry Ingredients

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan (9×5 inches) with butter or non-stick spray.
  2. In a medium bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon (if using). Set this aside.

Step 2: Mix the Wet Ingredients

  1. In a separate large bowl, cream the butter and sugar together until light and fluffy. This should take about 3 minutes using a hand mixer or stand mixer.
  2. Beat in the egg and vanilla extract until well combined.
  3. Stir in the crushed pineapple along with the juice. If you want to add walnuts or pecans, fold them into the mixture at this point.

Step 3: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.

Step 4: Bake the Bread

  1. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  2. Bake for 55-65 minutes, or until a toothpick inserted into the center of the bread comes out clean. If the top is browning too quickly, you can cover it loosely with foil during the last 15 minutes of baking.

Step 5: Cool and Serve

  1. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  2. Slice and serve! Enjoy the sweet, tropical flavor of your freshly baked pineapple bread.
