My Amish Neighbor’s Recipe: Homemade Sweet and Tangy Zucchini Relish
One of the best recipes my Amish neighbor shared with me was a delicious homemade zucchini relish. It’s the perfect blend of sweet, tangy, and slightly spicy flavors—great for spreading on sandwiches, adding to burgers, or even mixing into salads!
Ingredients:
- 4 cups grated zucchini (about 3 medium zucchinis)
- 1 cup grated onion
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 2 tablespoons salt
- 1 ½ cups sugar
- 1 cup apple cider vinegar
- ½ teaspoon turmeric
- ½ teaspoon mustard seeds
- ½ teaspoon celery seeds
- ¼ teaspoon black pepper
