Instructions

Step 1: Prepare the Cake

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cocoa powder, granulated sugar, and brown sugar.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Gradually pour in the boiling water while stirring. The batter will be thin, but that’s okay! This creates the moist texture of the cake.
  5. Pour the batter into the prepared baking dish and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

Step 2: Add the Marshmallow Layer

  1. Once the cake has finished baking, remove it from the oven and immediately sprinkle the mini marshmallows evenly over the hot cake.
  2. Return the cake to the oven for another 5–7 minutes, or until the marshmallows have softened and puffed up.
  3. Remove the cake from the oven and allow it to cool completely.

Step 3: Make the Chocolate Frosting

  1. In a saucepan over medium heat, combine the heavy cream, chocolate chips, and butter. Stir continuously until the mixture is smooth and glossy.
  2. Remove from heat and stir in the vanilla extract. Let the frosting cool slightly before pouring it over the marshmallow-covered cake.

Step 4: Top with Nuts (Optional)

  1. If using, sprinkle the chopped walnuts or pecans over the top of the cake for an extra crunch.
  2. Allow the cake to cool completely before cutting into squares.
