Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.

Step 2: Brown the Sausage

In a skillet over medium heat, brown the Italian sausage until fully cooked. If using sausages in casings, cook them whole and slice them later. If using ground sausage, crumble it as it cooks. Drain any excess fat and set aside.

Step 3: Prepare the Vegetables

In the same skillet, heat 1 tablespoon of olive oil and sauté the onions, bell peppers, and garlic for about 5 minutes, until slightly softened.

Step 4: Assemble the Casserole

  1. Spread the sautéed vegetables in the bottom of the prepared baking dish.
  2. Add the browned sausage on top.
  3. Pour the diced tomatoes and marinara sauce evenly over everything.
  4. Sprinkle with Italian seasoning, salt, black pepper, and red pepper flakes.
  5. If using cheese, sprinkle mozzarella or Parmesan over the top.

Step 5: Bake the Casserole

Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly (if using).

Step 6: Serve & Enjoy!

Let the casserole rest for 5 minutes, then garnish with fresh basil or parsley. Serve over pasta, rice, or with crusty Italian bread.
