Instructions
Step 1: Season the Chicken
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts or thighs dry with paper towels, then season generously with garlic powder, paprika, salt, and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken and cook for 4-5 minutes per side until golden brown. Once browned, remove the chicken from the pan and set it aside.
Step 2: Prepare the Sauce
- In the same skillet, reduce the heat to medium. Pour in the heavy cream and chicken broth, stirring to combine.
- Add the Dijon mustard and fresh thyme, then allow the sauce to simmer for about 5-7 minutes to thicken. Taste and adjust seasoning with salt and pepper as needed.
- Return the chicken to the skillet, spooning some of the sauce over the top. Place the skillet in the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Step 3: Roast the Potatoes
- While the chicken is baking, prepare the baby potatoes. Toss the potatoes with olive oil, dried rosemary, salt, and pepper.
- Spread them out in a single layer on a baking sheet. Roast in the oven (on a separate rack) for 20-25 minutes until they are golden and crispy on the outside and tender on the inside. For extra flavor, sprinkle with Parmesan cheese during the last 5 minutes of roasting.
Step 4: Assemble & Serve
- Once the chicken is done, remove it from the oven and let it rest for a few minutes.
- Plate the chicken, spoon the creamy sauce generously over the top, and garnish with fresh parsley.
- Serve alongside the roasted potatoes and enjoy!
Tips for Success
🍗 Opt for Chicken Thighs – If you want a richer flavor and juicier texture, use chicken thighs instead of breasts. They hold up well to longer cooking times.
🥔 Crispier Potatoes – For extra crispy potatoes, be sure to spread them out in a single layer and flip them halfway through roasting.
🍇 Pair with a Side Salad – Add a light, fresh green salad to balance the richness of the dish. A tangy vinaigrette will complement the creamy sauce beautifully.
🍷 Wine Pairing – Serve this dish with a crisp white wine like Chardonnay or Sauvignon Blanc, which pairs wonderfully with the creamy sauce.
