1. Make the Chocolate Whoopie Pies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, cream together butter and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until combined.
- Alternate adding the dry ingredients and buttermilk, mixing until smooth.
- Scoop tablespoon-sized portions of batter onto the prepared baking sheet, spacing them 2 inches apart.

- In a saucepan over medium heat, whisk together evaporated milk, sugar, egg yolk, and butter.
- Cook, stirring constantly, until the mixture thickens (about 5 minutes).
- Remove from heat and stir in vanilla, coconut, and pecans. Let cool.
3. Assemble the Whoopie Pies
- Spread or pipe the German chocolate filling onto the flat side of one whoopie pie.
- Top with another whoopie pie, pressing gently to sandwich them together.
- Repeat with the remaining cookies.
