Garlic Parmesan Chicken Meatloaf Recipe: A Delicious Twist on a Classic Dish

If you’re looking for a healthy, flavorful, and easy-to-make meal, this Garlic Parmesan Chicken Meatloaf is exactly what you need. Packed with savory garlic and rich Parmesan cheese, this twist on the classic meatloaf is lighter, healthier, and full of irresistible flavor. Whether you’re serving it for dinner or prepping it for weekly meals, this dish will quickly become a family favorite.

Ingredients:

  • 1 lb ground chicken (you can use ground turkey as well)
  • 1/2 cup breadcrumbs (you can use whole wheat or gluten-free breadcrumbs if preferred)
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup milk (dairy or dairy-free alternative)
  • 1 large egg
  • 1 tablespoon Italian seasoning (or use a blend of dried basil, oregano, and thyme)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (optional, for garnish)
  • 1/2 cup shredded mozzarella cheese (optional, for topping)
  • Olive oil (for greasing the pan)

Directions:

  1. Preheat the Oven: Start by preheating your oven to 375°F (190°C). Grease a loaf pan lightly with olive oil or line it with parchment paper to make it easier to remove the meatloaf after baking.
  2. Mix the Meatloaf Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, milk, egg, Italian seasoning, salt, and pepper. Use your hands or a spoon to mix everything together until well combined. The mixture should be moist but not too sticky. If it feels too dry, add a bit more milk; if it’s too wet, add a few more breadcrumbs.
  3. Form the Meatloaf: Transfer the mixture into the prepared loaf pan and gently press it down to form an even loaf shape. For an extra crispy crust, you can shape the meatloaf on a baking sheet instead of using a loaf pan.
  4. Bake the Meatloaf: Place the loaf pan in the preheated oven and bake for about 40-45 minutes, or until the meatloaf is cooked through and has reached an internal temperature of 165°F (74°C) when checked with a meat thermometer.
  5. Add Mozzarella (Optional): For a cheesy, golden topping, sprinkle the shredded mozzarella cheese on top of the meatloaf during the last 10 minutes of baking. Allow the cheese to melt and get bubbly.
  6. Garnish and Serve: Once the meatloaf is fully cooked, remove it from the oven and let it rest for 5-10 minutes. This helps the meatloaf set and makes it easier to slice. Garnish with freshly chopped parsley for a touch of color and flavor. Slice and serve warm.
