Instructions

1. Prepare the Potatoes

  • Boil the peeled and cubed potatoes in salted water until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Mash them until smooth.

2. Make the Potato Mixture

  • To the mashed potatoes, add the shredded cheddar cheese, cream cheese, melted butter, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined, and the cheese starts to melt into the potatoes.

3. Shape the Potato Balls

  • Once the mixture has cooled slightly, scoop out spoonfuls of the potato mixture and roll them into balls about 1-1½ inches in diameter.
  • Place them on a plate or baking sheet while you prepare the coating.

4. Coat the Potato Balls

  • Set up a dredging station with beaten eggs in one bowl and bread crumbs in another.
  • Dip each potato ball first into the beaten eggs, then roll it in the breadcrumbs, ensuring it’s evenly coated.

5. Fry the Potato Balls

  • In a deep skillet or pot, heat oil over medium-high heat. The oil should be about 350°F (175°C) for frying.
  • Fry the potato balls in batches, being careful not to overcrowd the pan. Fry for 3-4 minutes or until golden and crispy on the outside.
  • Remove the balls from the oil and place them on a paper towel-lined plate to drain any excess oil.

6. Serve & Enjoy

  • Serve the cheesy potato balls warm, paired with a dipping sauce like ranch dressing, sour cream, or ketchup.

Tips & Variations

🔸 Add-ins – Feel free to mix in extras like bacon bits, chopped green onions, or even a little hot sauce for extra flavor.
🔸 Make It Spicy – Add some finely chopped jalapeños or a dash of cayenne pepper to give the balls a spicy kick.
🔸 Air Fryer Option – For a lighter version, you can air fry the potato balls at 375°F (190°C) for about 12-15 minutes, flipping halfway through.
🔸 Vegetarian Version – These are already vegetarian-friendly, but you can add more veggies like corn, peas, or chopped spinach to the mixture for extra texture and flavor.
