Instructions
1. Brown the Beef
- In a large pot or Dutch oven, heat 1 tablespoon olive oil over medium-high heat.
- Add the beef stew meat in batches, browning the pieces on all sides. Don’t overcrowd the pot to get that perfect caramelization.
- Once browned, remove the beef from the pot and set aside.
2. Sauté the Aromatics
- In the same pot, add the remaining tablespoon of olive oil.
- Add the onion and cook until softened, about 5 minutes.
- Stir in the garlic and cook for another minute until fragrant.
3. Build the Stew
- Add the browned beef back to the pot, along with the carrots, potatoes, celery, and tomato paste.
- Pour in the beef broth and red wine (if using), scraping up any browned bits from the bottom of the pot.
- Add the Worcestershire sauce, thyme, rosemary, and bay leaves, and season with salt and black pepper to taste.
4. Simmer
- Bring the stew to a gentle boil, then reduce the heat to low.
- Cover and let simmer for 1 ½ to 2 hours, stirring occasionally, until the beef is tender and the vegetables are cooked through.
- If you prefer a thicker broth, mix 1 tablespoon cornstarch with a little cold water and stir it into the stew during the last 10 minutes of cooking.
5. Serve & Enjoy
- Discard the bay leaves and taste for seasoning, adjusting with salt and pepper if needed.
- Ladle the stew into bowls and serve hot, garnished with fresh parsley or crusty bread on the side for dipping.

🔸 Slow Cooker Method – After browning the beef, add all ingredients to a slow cooker and cook on low for 7-8 hours or high for 4-5 hours. No need to watch over the stove!
