One-Pan Chicken Fajitas
If you’re looking for a meal that’s packed with flavor, is incredibly easy to prepare, and is so versatile that even your kids will love it, then one-pan chicken fajitas are the perfect solution. This dish is filled with seasoned chicken, colorful bell peppers, onions, and a delicious blend of spices, all cooked together on a single pan. Serve with warm tortillas, and you’ve got a quick and tasty dinner that the whole family can enjoy.
Ingredients:
- 4 boneless, skinless chicken breasts (sliced into thin strips)
- 2 bell peppers (sliced, any color)
- 1 large onion (sliced)
- 1 tablespoon olive oil
- 1 packet fajita seasoning (or homemade seasoning)
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Tortillas (for serving)
- Toppings: Sour cream, guacamole, salsa, shredded cheese, cilantro, or any other favorite fajita toppings
Directions:
- Preheat the Pan: Start by heating a large skillet or cast-iron pan over medium-high heat. Add olive oil and let it warm up for a minute.
- Prepare the Chicken: While the pan is heating, slice the chicken breasts into thin strips. Season the chicken with fajita seasoning, garlic powder, cumin, paprika, salt, and pepper. Mix well to coat each piece of chicken evenly.
- Cook the Chicken: Once the pan is hot, add the seasoned chicken strips and cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked and lightly browned. Remove the chicken from the pan and set it aside.
- Cook the Veggies: In the same pan, add the sliced bell peppers and onion. Cook for about 5-6 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
- Combine: Add the cooked chicken back into the pan with the vegetables. Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld.
- Serve: Warm your tortillas in the microwave or on a separate pan. Once ready, spoon the chicken and veggie mixture into the tortillas, and top with your favorite toppings like sour cream, salsa, cheese, and fresh cilantro.
