Cheesy Baked Chicken Casserole Recipe
Ingredients
- 4 cups cooked chicken (shredded or diced)
- 2 cups cooked pasta (penne, rotini, or elbow macaroni work well)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 can cream of chicken soup (or cream of mushroom soup for a different flavor)
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup breadcrumbs (for topping)
- 2 tablespoons butter (melted, for topping)
- Fresh parsley or chives, for garnish (optional)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick spray or a small amount of butter.
Step 2: Prepare the Chicken and Pasta
- If you haven’t already cooked your chicken, you can easily poach chicken breasts in a pot of simmering water for about 15 minutes until fully cooked, then shred them with a fork. Alternatively, leftover chicken or rotisserie chicken works perfectly.
- Cook your pasta according to the package instructions, drain, and set aside.
Step 3: Make the Casserole Mixture
- In a large mixing bowl, combine the shredded chicken, cooked pasta, sour cream, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Stir everything together until well combined.
- Add in 1 1/2 cups of the shredded cheddar cheese and mix until the cheese is evenly distributed throughout the mixture.
Step 4: Assemble the Casserole
- Pour the chicken and pasta mixture into the prepared baking dish. Spread it out evenly so that it’s smooth on top.
- Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the casserole.
Step 5: Add the Topping
- In a small bowl, mix the breadcrumbs with the melted butter. Sprinkle the buttered breadcrumbs evenly over the top of the casserole. This will create a delicious, crispy topping that adds texture and flavor to the dish.
Step 6: Bake
- Bake the casserole in the preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.
Step 7: Garnish and Serve
- Once the casserole is done, remove it from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley or chives if desired.
- Serve the casserole warm and enjoy the smiles and praise from your family.
