Ingredients:
- For the Cheesecake Filling:
- 8 oz (225g) cream cheese, softened
- 1/4 cup granulated sugar
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1 large egg
- For the Coating and Frying:
- 1 sheet of puff pastry (store-bought or homemade)
- 1/2 cup all-purpose flour (for dusting)
- 1 egg, beaten (for egg wash)
- 1 cup crushed graham crackers (for coating)
- 1 tablespoon granulated sugar (for coating)
- 1 teaspoon ground cinnamon (optional, for added flavor)
- Vegetable oil (for frying)
- For Serving (Optional):
- Powdered sugar (for dusting)
- Fresh berries or fruit compote (optional)
- Chocolate or caramel sauce (optional)
Directions:
1. Prepare the Cheesecake Filling:
- In a large mixing bowl, combine the softened cream cheese, granulated sugar, sour cream, vanilla extract, and egg. Using a hand mixer or a whisk, beat the ingredients together until smooth and creamy. Make sure the mixture is well-blended and there are no lumps. This will form the delicious, rich filling for your cheesecake bites.
2. Chill the Cheesecake Filling:
- Once the cheesecake filling is prepared, cover the bowl and refrigerate it for at least 1-2 hours to firm up. This makes it easier to handle when forming the bites, preventing the filling from spilling out during frying.
3. Prepare the Puff Pastry:
- Roll out the puff pastry on a clean, lightly floured surface. If you’re using store-bought puff pastry, ensure it’s thawed to room temperature before you begin. Cut the pastry into small squares, about 2-3 inches per side. The number of squares will depend on how large you want your cheesecake bites to be.
