Directions:
- Preheat the oven to 375Β°F (190Β°C).
- Cook the chicken: Heat the olive oil in a skillet over medium heat. Season the chicken with salt, pepper, and thyme. Cook until browned and cooked through, about 7-8 minutes. Remove from the pan and set aside.
- SautΓ© the veggies: In the same skillet, add the onions, mushrooms, and garlic. SautΓ© until softened, about 5 minutes.
- Make the sauce: Add the heavy cream and chicken broth to the pan. Stir, scraping up any bits from the bottom. Let it simmer for 5 minutes until slightly thickened.
- Assemble the casserole: In a baking dish, combine the chicken, veggies, and sauce. Sprinkle with cheese if using.
- Bake: Place the dish in the oven and bake for 20 minutes, or until bubbly and golden on top.
- Serve: Let it cool for a few minutes, then serve and enjoy!
